Ingredients:
- Apples: Enough to fill the bottom of an 8-inch pie dish (about 4 to 6 medium apples), peeled and sliced
Topping: - Eggs: 2
- Granulated sugar: 1 cup (set aside ¼ cup for cinnamon sugar)
- Cinnamon: 1 teaspoon (to mix with the reserved sugar)
- Melted butter or margarine: 2 tablespoons
- All-purpose flour: 1 cup
- Baking powder: 1 teaspoon
- Vanilla extract: 1 teaspoon
Instructions:
- Prepare Apples and Dish: Peel and slice enough apples to form an even layer at the bottom of your 8-inch pie plate.
- Make the Topping: In a medium bowl, combine 2 eggs, ¾ cup granulated sugar, melted butter or margarine, all-purpose flour, baking powder, and vanilla extract. Mix until just smooth and blended, being careful not to overmix.
- Add Cinnamon Sugar: In a small bowl, stir together the reserved ¼ cup sugar and 1 teaspoon cinnamon. Sprinkle this evenly over the sliced apples in the pie plate.
- Assemble and Bake: Pour the topping mixture gently over the apples, spreading it evenly to cover them. Bake at 350°F (175°C) for 40 to 45 minutes, or until the topping is set and golden brown.
