Instructions:
- Preheat Oven & Prepare Pan: Heat your oven to 375°F (190°C). Lightly coat a 9×13-inch baking dish with cooking spray and set aside.
- Cook Meat & Onion: In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and the onions are soft, about 4–5 minutes. Drain off excess grease.
- Season the Beef: Stir in taco seasoning and cook for 1 more minute to let the spices bloom and coat the beef.
- Add Salsa, Beans & Corn: Mix in the salsa, corn, and black beans. Stir until the mixture is fully combined and warmed through.
- Stir in Sour Cream: Remove the skillet from the heat and mix in the sour cream until creamy and well-blended.
- Layer the Casserole:
- Start with ⅓ of the crushed Doritos spread over the bottom of the baking dish.
- Spoon and spread half the meat mixture over the chips.
- Sprinkle ⅓ of the shredded cheese over the top.
- Repeat with another ⅓ Doritos, the remaining meat mixture, and another ⅓ cheese.
- Finish with the last ⅓ Doritos and top with the final layer of cheese.
- Bake: Cover the dish tightly with foil and bake for 30 minutes. Remove the foil and bake for another 15 minutes until the top is bubbly and golden.
