👩🍳 Instructions
Preheat & Prepare Pan Preheat oven to 350°F (175°C). Grease a large loaf pan generously and set aside.
Mix Dry Ingredients In a medium bowl, whisk together flour, baking powder, salt, and nutmeg. Set aside for later.
Beat Wet Ingredients In a large mixing bowl, cream butter and sugar until fluffy. Add eggs one at a time, mixing well. Stir in the vanilla pudding mix, then pour in the eggnog and vanilla extract. Mix until smooth.
Combine & Pour Slowly incorporate the dry ingredients into the wet mixture, stirring gently just until everything is combined. Avoid overmixing. Pour the batter into the prepared loaf pan.
Make the Streusel Topping In a small bowl, mix brown sugar, flour, cinnamon, nutmeg, and butter using a fork or your hands until it forms a crumbly topping. Sprinkle evenly over the batter in the pan.
Bake the Loaf Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.
