Instructions
- Cook bacon pieces in a large oven-safe skillet until crispy. Remove and drain on paper towels.
- In the same skillet, cook the sausage along with onions and bell peppers until browned and softened.
- Whisk together eggs and milk in a large bowl until well combined.
- Drain most of the grease from the skillet, then add the frozen hash browns and seasonings.
- Stir in the cooked sausage, onions, peppers, and bacon.
- Sprinkle cheese evenly over the mixture, then pour the egg mixture on top. Bake until the casserole is nearly set. Add more cheese on top and bake a little longer until melted and bubbly.
Tips for Success
- Thick-cut bacon adds extra flavor and texture.
- Use a 12-inch oven-safe skillet (cast iron preferred) or a 9×13 baking dish. The hashbrowns might seem like a lot at first but will shrink as they bake.
- If there isn’t much bacon grease left, drizzle 2 tablespoons of melted butter over the hashbrowns for extra richness.
- Feel free to mix and match cheeses—you can’t go wrong with pepper jack and cheddar.
- Swap bacon or sausage for diced ham if preferred. Any color bell pepper—green, red, yellow, or orange—works great.
- Add red pepper flakes or hot sauce for some heat.
- Serve alongside fresh fruit for a balanced meal.
