| Tomato, diced | 1 |
| Green tomato, diced | 1 |
| Green peppers, finely chopped | 6 |
| Optional: Fresh herbs, garlic, cheese | As desired |
Instructions
Step 1: Prepare the Dough
Activate the Yeast:
In a large bowl, combine the warm milk, warm water, sugar, and yeast. Mix and let sit for 5–10 minutes until it becomes foamy on top.
Form the Dough:
Add in the vegetable oil, salt, and 3 cups of the flour. Mix until a loose dough forms. Gradually add the rest of the flour, kneading on a lightly floured surface for about 8–10 minutes until the dough is smooth and elastic. It should feel soft but not overly sticky.
Let It Rise:
Transfer the dough to a lightly oiled bowl, turning it to coat all sides. Cover with a clean towel or plastic wrap and let it rest in a warm spot for 1 to 1½ hours, or until doubled in volume.
Step 2: Make the Filling & Assemble the Bread
Prepare the Filling:
While the dough rises, combine the diced red and yellow peppers, tomatoes, and green peppers in a mixing bowl. Season with salt, pepper, and any preferred herbs, garlic, or cheese. Stir to combine and set aside.
Roll and Fill:
Once the dough has risen, punch it down and divide it into two equal halves. Roll out one half into a large circle or rectangle about ¼-inch thick and place it on a parchment-lined baking tray.
Add the Filling:
Spread the vegetable mixture evenly over the rolled dough, leaving a bit of space at the edges. Roll out the second piece of dough to the same size and place it over the filling. Seal the edges firmly, trimming any excess if necessary.
Step 3: Final Proof & Bake
Second Rise:
Cover the shaped bread with a towel and let it rise again for 30 minutes until it puffs up slightly.
Bake the Bread:
Preheat the oven to 375°F (190°C). For a shiny golden crust, you can brush the top with egg wash. Use a knife to cut a few small vents into the top layer for steam to escape. Bake for 30–35 minutes, or until golden brown and the bottom sounds hollow when tapped.
To Serve
Let the bread rest for a few minutes before slicing. It’s delicious warm, either on its own or served with a dip like yogurt, sour cream, or tzatziki.
