Preheat the Oven Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Prep the Veggies Dice the celery, onion, and red bell pepper into small, uniform pieces.
Mix the Filling In a large bowl, combine the celery, onion, red bell pepper, cheese, shoepeg corn, green beans, cream of celery soup, and sour cream. Add salt and pepper to taste. Stir until well blended.
Layer in the Dish Pour the mixture into your greased baking dish and spread it out evenly.
Make the Topping In a small bowl, mix crushed Ritz crackers with melted butter until combined.
Add the Topping Sprinkle the buttery cracker mixture evenly over the casserole.
Bake Place the casserole in the oven and bake for 30–35 minutes, or until the top is golden and the filling is bubbly.
Cool & Serve Let it rest for a few minutes before serving warm.
