Instructions

Step 1: Prep the Oven and Dish
Preheat your oven to 375°F (190°C). Lightly grease a 13×9-inch baking dish with nonstick spray.

Step 2: Make the Ricotta Filling
In a medium bowl, mix together:

  • ¾ cup ricotta cheese
  • ¼ cup basil pesto
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon salt

Stir until smooth and well combined.

Step 3: Prepare and Season the Chicken
Season 4 large chicken breasts with:

  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt

Slice each breast horizontally to create a pocket (but don’t cut all the way through).

Step 4: Stuff the Chicken
Open each chicken breast and fill with about ¼ cup of the ricotta mixture. Close and secure the edges with toothpicks to keep the filling in place.

Step 5: Add Sauce and Cheese
Place the stuffed chicken in the baking dish. Pour 1 cup of marinara sauce evenly over the chicken, then top with 1 cup shredded mozzarella cheese.

Step 6: Bake
Cover with foil and bake for 35 minutes to cook the chicken through and melt the cheese.

Step 7: Broil
Remove the foil and toothpicks. Broil for 2–4 minutes until the cheese is golden and bubbling. Watch carefully to avoid burning.
