🍋🥥 Lemon Coconut Cream Pie
Ingredients:
- 1 pre-baked 9-inch pie crust
- 1 cup granulated sugar
- ¼ cup cornstarch (for thickening)
- ¼ tsp salt
- 1½ cups whole milk
- ½ cup coconut milk
- 4 large egg yolks
- ⅓ cup fresh lemon juice
- 1 tbsp lemon zest
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- 1 cup sweetened shredded coconut (toasted, for topping)
Instructions:
Step 1: Prepare the Filling Base
In a medium saucepan, combine the sugar, cornstarch, and salt. Slowly whisk in the whole milk and coconut milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble.
Step 2: Temper the Egg Yolks
In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot mixture into the yolks while whisking continuously. Then slowly pour the yolk mixture back into the saucepan, stirring constantly, and cook for another 2 minutes.
Step 3: Finish the Filling
Remove the pan from the heat and stir in the lemon juice, lemon zest, butter, and vanilla extract until everything is fully blended and smooth.
Step 4: Assemble the Pie
Pour the filling into the prepared pie crust and smooth the top. Refrigerate for at least 4 hours, or until the filling is fully set.
Step 5: Toast the Coconut
Preheat the oven to 350°F (175°C). Spread the shredded coconut evenly on a baking sheet and toast for 5–7 minutes, stirring occasionally, until lightly golden. Allow it to cool completely.
Step 6: Garnish and Serve
Sprinkle the toasted coconut over the chilled pie. Slice and serve for a bright, refreshing dessert.
