This satisfying and hearty casserole is ideal for serving a group. Featuring tender chicken, a creamy sauce, and a crispy topping, it’s a guaranteed crowd-pleaser.

Instructions:
Preheat & Prepare Dish: Set the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Cook Chicken: Season chicken breasts with salt and pepper. Heat olive oil in a skillet and cook chicken until golden brown on both sides. Remove and set aside.
Sauté Vegetables: In the same pan, sauté onion, garlic, bell pepper, and mushrooms until tender.
Mix Casserole Base: In a large bowl, combine the sautéed vegetables, peas, corn, cream of chicken soup, chicken broth, sour cream, and shredded cheddar cheese. Stir thoroughly.
Assemble: Pour the mixture into the prepared baking dish. Arrange the cooked chicken breasts on top.
Prepare Topping: Mix crushed butter crackers with melted butter. Sprinkle evenly over the casserole.
