Company Chicken Casserole

This satisfying and hearty casserole is ideal for serving a group. Featuring tender chicken, a creamy sauce, and a crispy topping, it’s a guaranteed crowd-pleaser.


Ingredients:

Casserole:

Chicken broth1 cup
Sour cream1 cup
Shredded cheddar cheese1 cup

Instructions:

  1. Preheat & Prepare Dish:
    Set the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Cook Chicken:
    Season chicken breasts with salt and pepper. Heat olive oil in a skillet and cook chicken until golden brown on both sides. Remove and set aside.
  3. Sauté Vegetables:
    In the same pan, sauté onion, garlic, bell pepper, and mushrooms until tender.
  4. Mix Casserole Base:
    In a large bowl, combine the sautéed vegetables, peas, corn, cream of chicken soup, chicken broth, sour cream, and shredded cheddar cheese. Stir thoroughly.
  5. Assemble:
    Pour the mixture into the prepared baking dish. Arrange the cooked chicken breasts on top.
  6. Prepare Topping:
    Mix crushed butter crackers with melted butter. Sprinkle evenly over the casserole.
  7. Bake:
    Bake for 25-30 minutes, until the casserole is bubbly and the topping has turned golden brown.
  8. Serve:
    Let it cool slightly before serving. Optionally, garnish with fresh parsley.
