Oven-Baked Southwestern Beef and Pepper Bake
This hearty and flavorful one-pan meal brings together seasoned ground beef, tender potatoes, and a vibrant medley of bell peppers—all smothered in melted cheddar cheese. It’s a comforting, easy-to-make dish that’s perfect for busy weeknights.
Ingredients:

| Ground cumin | 1 teaspoon |
| Chili powder | 1 teaspoon |

Instructions:
- Prepare Oven & Skillet:
Preheat your oven to 375°F (190°C). Heat the olive oil in a large skillet over medium heat. - Sauté & Brown:
Add diced onion and minced garlic to the skillet, cooking until the onion turns translucent. Add the ground beef and cook until fully browned, breaking it apart as it cooks. Drain excess fat if needed. - Add Veggies:
Stir in the diced red, yellow, and green bell peppers, along with the potatoes. Cook for around 5 minutes to slightly soften the vegetables. - Season & Assemble:
Sprinkle in the cumin, chili powder, salt, and pepper. Mix everything well, then transfer the mixture into a baking dish, spreading it out evenly. - Cheese & Bake:
Top the mixture with shredded Cheddar cheese. Bake for 25–30 minutes or until the potatoes are fork-tender and the cheese is melted and golden. - Finish & Serve:
Let it rest for a few minutes after baking. Garnish with chopped cilantro if desired, and serve warm.
