My dad relied on this hearty classic during tough times. With 4 ingredients you can make a filling and savory bowl that tastes like a million bucks.

This Slow Cooker 4-Ingredient Poor Man’s Stew is a simple, budget-conscious meal that transforms everyday ingredients into a warm, satisfying dish. As it cooks slowly, the flavors come together into a rich, savory mixture with a gravy-like consistency. The potatoes naturally thicken the broth, while the seasoned beef and vegetables create a comforting, home-cooked taste—similar to a classic pot roast but with much less work.
Slow Cooker 4-Ingredient Poor Man’s Stew
Ingredients:
- 1½ lbs ground beef (80–85% lean)
- 4 medium potatoes (russet or Yukon, cut into ½-inch cubes)
- 4 large carrots (diced)
- 2 packets dry onion soup mix
- 1½ cups water
Directions:
Step 1:
Cook the ground beef in a skillet over medium heat until browned and fully done. Drain most of the fat, leaving a small amount for flavor.
Tip: Browning the beef first enhances the overall depth and richness of the stew.
Step 2:
Spread the diced potatoes and carrots evenly across the bottom of a 5–6 quart slow cooker.
Step 3:
Layer the cooked beef over the vegetables. Sprinkle the onion soup mix evenly on top, then pour in the water. Stir gently to combine.
Tip: It may seem like there’s not enough liquid, but the vegetables release moisture as they cook, and the potatoes help create a thick, hearty sauce.
Step 4:
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
The stew is ready when the carrots are soft and the sauce has thickened enough to coat a spoon.
Step 5:
Give everything a good stir before serving. If the stew is thicker than you prefer, add a bit of water until it reaches your desired consistency.*
