My dad requested this for his birthday dinner instead of going out to a restaurant.

This Oven-Baked Sour Cream Onion Chicken is a simple yet rich dish that turns just a few ingredients into something incredibly tender and full of flavor. The sour cream creates a creamy coating over the chicken, while the thinly sliced onions soften and lightly caramelize as everything bakes together. The result is a smooth, tangy sauce that feels much more complex than the recipe suggests.
Oven-Baked Sour Cream Onion Chicken (3 Ingredients)
Ingredients:
- 4 chicken breasts (about 2 lbs)
- 2 cups sour cream
- 2 large yellow onions, thinly sliced
- 1 tsp kosher salt (optional)
- ½ tsp black pepper (optional)
Instructions:
Step 1: Prep the dish
Preheat the oven to 375°F. Lightly grease a casserole dish with butter or olive oil.
Tip: Pat the chicken dry with paper towels so the sour cream adheres better during baking.
Step 2: Season and place chicken
If the chicken breasts are thick, gently flatten them to an even thickness. Lightly season with salt and pepper, then arrange in a single layer in the dish.
Step 3: Spread the sour cream
Stir the sour cream until smooth, then evenly coat each piece of chicken. It’s okay if some collects at the bottom.
Step 4: Add onions
Scatter the sliced onions over the top.
Tip: Keep them loosely spread—some will melt into the sauce, while others on top will brown slightly and become sweeter.
Step 5: Bake covered
Loosely cover the dish with foil (avoid touching the topping) and bake for 20 minutes to keep the chicken moist and start softening the onions.
Step 6: Finish uncovered
Remove the foil and continue baking for another 20–30 minutes, until the chicken reaches an internal temperature of 165°F. For a lightly golden top, broil for 2–3 minutes at the end if desired.
Step 7: Rest and serve
Let the dish rest for about 5 minutes before serving.
