🧀 Cheesy Pan-Fried Zucchini Rounds
This simple recipe brings out the best in zucchini—golden and crisp on the outside, soft on the inside, and finished with a rich, cheesy topping. It’s a fast and flavorful side dish you’ll want to make again and again.
Ingredients
Ingredient | Amount |

Medium zucchini, sliced into rounds | 2 |
Olive oil | 2 tablespoons |
Salt and black pepper | To taste |
Shredded mozzarella | 1/2 cup |

Instructions
- Slice the Zucchini
Rinse and dry the zucchini, then cut into 1/4-inch thick rounds. Season lightly with salt and pepper. - Pan-Fry
In a large skillet, heat the olive oil over medium heat. Arrange the zucchini slices in a single layer and cook for 2–3 minutes on each side, until they are nicely browned and tender. - Top with Cheese
Lower the heat to a simmer. Sprinkle the mozzarella and Parmesan evenly over the zucchini rounds. Cover the skillet and let the cheese melt for 1–2 minutes until bubbly. - Garnish and Serve
Transfer the cheesy zucchini to a serving dish, sprinkle with chopped parsley, and serve while hot.
