Beef Dorito Casserole

Packed with bold flavors and satisfying textures, this Beef Dorito Casserole is a playful spin on classic comfort food. It layers savory ground beef, beans, and tomatoes over a bed of Cool Ranch Doritos, all smothered in gooey melted cheese. It’s a crowd-pleasing meal that comes together easily—ideal for busy weeknights or laid-back gatherings.


Ingredients:

Cool Ranch Doritos1 (9 oz) bag
Shredded Mexican blend cheese3½ cups

Instructions:

1. Preheat and Prep:
Preheat your oven to 350°F (175°C). Lightly coat a 9×13-inch baking dish with nonstick spray.

2. Cook the Beef and Veggies:
In a large skillet over medium heat, brown the ground beef, breaking it up as it cooks. Drain excess fat. Add the diced onion and red pepper, cooking for another 3–4 minutes until softened.

3. Season and Simmer:
Sprinkle in the taco seasoning and pour in the water or broth. Stir to combine. Lower the heat and simmer for 5–6 minutes until thickened.

4. Combine the Mixture:
Remove the skillet from heat. Stir in the tomatoes with green chiles, black beans, and sour cream. Mix until well incorporated.

5. Build the Layers:
Slightly crush about 1 cup of Doritos and spread them evenly over the bottom of the baking dish.
Add half of the beef mixture over the chips.
Top with another layer of crushed Doritos and half the shredded cheese.
Spread the remaining beef mixture on top, followed by the rest of the crushed chips and cheese.

6. Bake:
Place the casserole in the oven and bake for 25–30 minutes, until the cheese is melted and bubbling at the edges.

7. Serve:
Let cool slightly before serving. Top with sour cream, salsa, hot sauce, or chopped green onions for an extra pop of flavor.
