Ingredients:
For the Dumplings:
- 6 large Granny Smith apples, peeled and cored
- 2 (9-inch) pie crusts
- ½ cup packed brown sugar
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
- 6 tablespoons butter, cut into slices
For the Sauce:
- 2 cups apple cider
- 3 tablespoons brown sugar
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
Instructions:
- Prepare & Preheat: Set your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter and set it aside.
- Shape the Dumplings: Cut each pie crust into 6 equal pieces and roll each piece into roughly a 7-inch square or circle, large enough to enclose one apple. Place one peeled and cored apple on each dough piece.
- Stuff the Apples: In a small bowl, combine brown sugar, cinnamon, nutmeg, and salt. Divide this mixture among the apples, stuffing some into the hollow cores and spreading the rest around the base. Insert a butter slice into each apple’s core.
- Wrap the Dumplings: Bring the dough corners up and around the apple, sealing the edges tightly to fully encase the fruit. Transfer the wrapped dumplings to the greased baking dish.
- Prepare & Pour the Sauce: In a saucepan over medium-high heat, combine apple cider, brown sugar, butter, vanilla, and cinnamon. Bring to a gentle boil, stirring until the sugar dissolves. Let it cook for another minute, then remove from heat and cool for 5 minutes. Pour the sauce evenly over the dumplings.
- Bake & Serve: Bake for 50-55 minutes, or until the crust turns golden and the apples become tender. Allow the dumplings to rest for 10 minutes before serving. Enjoy warm, topped with ice cream and drizzled with extra sauce.
