Instructions
1. Preheat Oven and Prepare Dish
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Layer the Potatoes, Onion, and Cheese
- Spread half of the sliced potatoes in the bottom of the dish.
- Top with half of the chopped onion.
- Sprinkle with 1 cup of shredded Pepper Jack cheese.
- Repeat with the remaining potatoes, onion, and cheese.
3. Make the Cream Sauce
In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for 1 minute, stirring constantly to form a roux. Gradually whisk in the milk and continue stirring until the mixture thickens and becomes smooth.
4. Season the Sauce
Remove the saucepan from heat. Stir in the sour cream, salt, black pepper, and garlic powder. Mix until well blended.
5. Assemble and Bake (Covered)
Pour the cream sauce evenly over the layered potatoes and onions. Cover the dish tightly with aluminum foil and bake for 60 minutes.
6. Bake Uncovered to Finish
Remove the foil and bake for another 20–25 minutes, or until the top is golden and bubbly and the potatoes are fork-tender.
7. Garnish and Serve
Remove from the oven and sprinkle with paprika for a pop of color. Serve warm.
