  • Ground cinnamon — 2 teaspoons
  • Unsalted butter, melted — 3 tablespoons

Instructions:

  1. Preheat Oven:
Set your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper or a silicone mat.
  2. Prepare the Pie Crust:
On a lightly floured surface, roll the unbaked pie crust out evenly to about 1/8 inch thickness.
  3. Make the Cinnamon Sugar:
In a small bowl, stir together the granulated sugar, brown sugar, and cinnamon until well combined.
  4. Assemble the Cookies:
Brush the melted butter evenly across the rolled-out crust. Evenly sprinkle the cinnamon sugar mixture on top. Cut the dough into your preferred shapes or strips.
  5. Bake:
Arrange the cut pieces on the baking sheet with a bit of space between them. Bake for 10 to 12 minutes until the edges turn golden and the cookies become crisp.
