Sautéed Sausage, Peppers & Onions

Sausage, Peppers & Onions Skillet
This easy skillet meal brings together sliced, pre-cooked chicken or turkey sausage with soft onions and colorful bell peppers. Seasoned with classic Italian herbs and finished with a splash of balsamic vinegar, it’s a simple dish packed with savory flavor.
Ingredients
- Yellow onions, peeled and sliced into rings — 6 cups (about 1½ large onions)
- Large bell peppers, sliced about ¼ inch thick — 2 (4 cups)
- Fully cooked reduced-fat chicken or turkey sausage — 1 package (12 oz, 4 sausages)
- Olive oil — 3 teaspoons, divided
- Dried oregano — ¼ teaspoon
- Dried basil — ¼ teaspoon
- Salt and freshly ground black pepper — to taste
- Fresh garlic, minced — 2 teaspoons
- Balsamic vinegar — 1 tablespoon
- Cooking spray — as needed
Instructions
Step 1: Soften the Vegetables
Add the sliced onions and bell peppers to a large microwave-safe bowl. Microwave on high for 8–10 minutes, until the vegetables are tender.
Step 2: Brown the Sausage
Slice the sausages into ¼-inch rounds. Heat a large nonstick skillet coated with cooking spray, add the sausage, and cook for about 5 minutes, stirring often, until lightly browned. Transfer to a plate and set aside.
Step 3: Cook the Vegetables
Spray the skillet again and add 2 teaspoons of olive oil. Add the softened onions and peppers along with oregano, basil, salt, and pepper. Cook over medium-high heat, stirring frequently, until lightly caramelized, about 10 minutes.
If the pan becomes dry, add the remaining 1 teaspoon of olive oil and 2 tablespoons of water.
Step 4: Combine and Finish
Stir in the minced garlic and cook for about 1 minute, until fragrant. Return the sausage to the skillet, add the balsamic vinegar, and stir. Cook for another 2 minutes, until everything is heated through.
Step 5: Serve
Transfer to a serving platter and enjoy as-is, or serve with mustard, toasted bread, or rolls if desired.
