It’s one of those dishes that instantly earns a spot in the regular dinner rotation. You can easily lighten it up by using ground turkey or swapping in whole wheat pasta without losing any of its cozy appeal.
Perfect for busy weeknights and just as good the next day, this casserole somehow tastes even better as leftovers. My family loved it so much that it’s now a go-to whenever we need a dependable, crowd-pleasing meal.

Instructions
Step 1: Cook the Meat
Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
In a large skillet, cook the ground meat with the minced onion until browned. Drain any excess fat.
Step 2: Build the Sauce
Stir in the Manwich sauce, beef broth, and diced tomatoes. Bring the mixture to a boil, then add the pasta. Cook until the pasta is tender.
Step 3: Add Creaminess
Lower the heat and stir in the corn and cubed Velveeta. Mix until the cheese is fully melted and the sauce is smooth.
Step 4: Bake
Transfer the mixture to the prepared baking dish. Sprinkle shredded cheddar evenly over the top.
Cover and bake for 15–20 minutes, until hot, bubbly, and lightly golden.
Step 5: Serve
