Slow Cooker Bangers & Onions with Just 4 Ingredients

This slow cooker 4-ingredient Bangers and Onions is the kind of no-fuss, hearty meal my Irish grandfather would have prepared—simple ingredients, slow cooking, and rich, comforting flavor. Sweet onions cook down beneath traditional Irish sausages, gradually transforming into a deep, savory gravy. With very little effort, the sausages become incredibly tender, nearly falling apart, and are coated in a glossy sauce that tastes like it took hours of careful attention.

It’s classic comfort food—perfect for St. Patrick’s Day, yet easy enough to enjoy on any busy evening.

Serve it over creamy mashed potatoes to soak up the flavorful gravy, and add steamed cabbage or sautéed greens for balance. A slice of crusty bread is perfect for catching every last bit of sauce. For drinks, a smooth Irish red ale or stout pairs beautifully, though a dry cider or even a fresh salad works nicely alongside.

Slow Cooker Bangers & Onions 🇮🇪🥘

Ingredients

  • 2 lbs (about 8 links) Irish-style pork sausages (bangers)
  • 3 large yellow onions, thinly sliced
  • 2 cups beef stock (preferably low-sodium)
  • 2 tablespoons Worcestershire sauce

Directions

1. Prepare the onions
Peel and slice the onions thinly.

2. Brown the sausages (optional)
For added flavor, sear the sausages in a skillet for about 2–3 minutes on each side until lightly browned.

3. Layer the base
Spread the sliced onions evenly across the bottom of the slow cooker.

4. Add the sausages
Place the sausages on top of the onions, nestling them in slightly.

5. Create the sauce
Mix the beef stock with the Worcestershire sauce, then pour the mixture over the sausages and onions.

6. Cook low and slow
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the sausages are tender and the onions have softened into a rich, dark gravy.

7. Optional thickening
For a thicker sauce, remove the lid during the last 30 minutes of cooking, or mash some of the onions into the liquid.

8. Serve
Taste and adjust seasoning if needed. Serve the sausages and onion gravy over mashed potatoes or your preferred sides. Garnish with fresh parsley if desired.
