1. Prepare the Cake Batter
- Preheat your oven to 350°F (180°C). Lightly grease and flour a cake pan.
- In a large bowl, whisk the eggs and salt until frothy.
- Add granulated and vanilla sugar, then slowly pour in the oil while whisking to combine.
- Separately, stir the instant coffee into the milk until dissolved.
- In another bowl, sift together the flour, cocoa powder, and baking powder.
- Alternately combine the dry ingredients and coffee-milk into the egg mixture. Stir gently until just blended.
2. Bake the Cake
- Pour the batter into your prepared pan.
- Bake for around 35 minutes, or until a toothpick comes out clean.
- Let it cool fully before adding the topping.
3. Make the Lotus Coffee Topping
- In a saucepan, combine sugar, cornstarch, and instant coffee.
- Slowly whisk in the milk to form a smooth mixture.
