For the Filling:

🥣 Make the Dough:

  1. In a large bowl, mix the flour and salt.
  2. Cut the cold butter into the flour using a pastry cutter or your hands until the mixture resembles coarse crumbs.
  3. In a separate bowl, whisk together one egg yolk and cold water.
  4. Pour the wet mixture into the flour mixture and stir just until a dough forms.
  5. Shape into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  1. Cook the ground beef in a skillet over medium heat. Season with salt and pepper. Drain off excess fat.
  2. Stir in the diced potatoes, carrots, and onion. Sauté until vegetables are nearly tender.
  3. Add garlic, Worcestershire sauce, rosemary, and thyme. Mix well and remove from heat.
  4. Allow the filling to cool slightly before assembling.

🧁 Assemble and Bake:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Divide the chilled dough into six equal pieces.
  3. Roll each portion into a 6–7 inch circle on a lightly floured surface.
  4. Wet the edges of the dough with a bit of water.
  5. Spoon some of the filling onto one side of the dough circle.
  6. Fold the dough over to form a half-moon and press the edges to seal.
  7. Crimp the edges tightly using a fork or your fingers.
  8. Place the pasties onto the prepared baking sheet.
  9. Cut a small slit in the top of each to allow steam to escape.
  10. Brush the tops with the remaining egg yolk for a shiny, golden crust.
  11. Bake for 35–40 minutes, or until golden and cooked through.

  1. Follow assembly steps through brushing with egg wash.
  2. Bake for only 20 minutes.
  3. Cool completely, then freeze.
  4. When ready to eat, brush with fresh egg wash and bake at 400°F (200°C) for an additional 20 minutes until golden.
