Caramel Poke Cake

This decadent dessert brings together a soft, fluffy white cake, a rich caramel soak, and a creamy, tangy cream cheese frosting. Thanks to the poke technique, every bite is drenched in caramel goodness—making it a surefire hit for any occasion.

For the Cake:

Instructions

  1. Preheat and Prepare Pan
    Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray and set it aside.
  2. Mix and Bake the Cake
    In a large bowl, whisk together the cake mix, eggs, oil, and milk until smooth. Pour the batter into the prepared baking dish and bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.
  3. Poke and Add Caramel
    As soon as the cake comes out of the oven, use a fork to poke holes all over the surface. Warm the caramel sauce slightly if it’s too thick, then pour half of it over the hot cake. Spread it out evenly so it soaks into the holes.
  4. Let Cake Cool
    Allow the cake to cool completely at room temperature. This ensures the caramel absorbs into the cake layers properly.
  5. Make the Frosting
    While the cake cools, beat the cream cheese and butter together until light and smooth. Add the vanilla extract and powdered sugar, beating for another 2–3 minutes until fluffy and well blended.
  6. Frost and Drizzle
    Once the cake has cooled, spread the cream cheese frosting evenly over the top. Drizzle the remaining caramel sauce over the frosting. For a decorative touch, swirl it gently using a knife.
  7. Refrigerate
    Place the finished cake in the refrigerator to chill until serving time. This helps everything set nicely and enhances the flavor.
