4-Ingredient Amish Beef and Bell Pepper Bake

This Amish Beef and Bell Pepper Bake is a simple, hearty casserole that brings together seasoned ground beef, sweet bell peppers, tomatoes, and plenty of melted cheese.
It has all the comforting flavors of stuffed peppers without the extra work of filling each pepper individually. Everything bakes together in one dish, giving you a rich, savory casserole with tender vegetables and a bubbly golden cheese topping.
4-Ingredient Amish Beef and Bell Pepper Bake
Ingredients
- 1 1/2 pounds ground beef
- 1 small onion, chopped
- 1 can crushed tomatoes or tomato sauce, 28 ounces
- 2 large bell peppers, any color, chopped
- 2 cups shredded cheddar or Colby Jack cheese
Directions
1. Brown the beef and onion
Preheat your oven to 375°F (190°C).
Place the ground beef and chopped onion in a large skillet over medium heat.
Cook for about 7 to 10 minutes, breaking the beef apart as it browns, until no pink remains and the onion has softened.
Drain off any excess grease.
2. Assemble the casserole
Transfer the cooked beef and onion mixture to a 9-by-13-inch baking dish.
Add the crushed tomatoes and chopped bell peppers.
Stir everything together until evenly combined, then spread the mixture into an even layer.
3. Add the cheese
Sprinkle the shredded cheddar or Colby Jack evenly over the top.
Do not stir the cheese into the casserole.
Keeping it on top creates a rich, melted layer while helping the mixture underneath stay moist as it bakes.
4. Bake covered
Cover the baking dish tightly with aluminum foil.
Bake for 25 minutes.
5. Finish uncovered
Carefully remove the foil and return the casserole to the oven.
Bake for another 10 to 15 minutes, or until the sauce is bubbling around the edges and the cheese is fully melted with lightly golden spots on top.
6. Rest and serve
Remove the casserole from the oven and let it rest for about 5 minutes before serving.
This gives the sauce a little time to thicken and makes the casserole easier to spoon onto plates.
Serve warm on its own or alongside rice, noodles, mashed potatoes, or crusty bread.
Simple, cheesy, and filling, this easy beef and bell pepper bake is a comforting casserole for busy weeknights or relaxed family dinners.
