Easy Chocolate Eclair Dessert

No-Bake Chocolate Éclair Cake
This no-bake chocolate éclair cake is a classic dessert that delivers all the flavor of a traditional éclair—without the need for baking. The real transformation happens as it chills: the graham crackers absorb the creamy pudding and whipped topping, turning into soft, cake-like layers that melt with every bite. It’s simple to prepare and incredibly satisfying.
📝 Ingredients
- 3 cups milk
- 2 sleeves graham cracker squares
- 2 (3½ oz) packages instant vanilla pudding mix
- 1 (16 oz) tub chocolate frosting
- 1 (8 oz) container whipped topping (thawed)
👩🍳 Instructions
Step 1: Prepare the Filling
In a medium bowl, whisk together the pudding mix and milk until smooth and thickened. Fold in the whipped topping gently until fully combined and fluffy.
Step 2: Create the Base Layer
Arrange a single layer of graham crackers along the bottom of a 9×13-inch dish. Break pieces as needed to fully cover the surface.
Step 3: Build the Layers
Spread half of the pudding mixture over the crackers. Add another layer of graham crackers, followed by the remaining pudding mixture. Finish with one more layer of graham crackers on top.
Step 4: Chill Briefly
Cover and refrigerate for 30–60 minutes to allow the filling to set slightly, making it easier to add the topping.
Step 5: Add the Chocolate Layer
Place the chocolate frosting in a microwave-safe bowl and heat for about 15 seconds until it softens. Stir until smooth, then spread evenly over the top layer.
Tip: Make sure the frosting is just softened—not too hot—to keep the layers intact.
Step 6: Refrigerate Overnight
Cover and chill for 8–12 hours. During this time, the graham crackers soften into a tender, pastry-like texture. Slice and serve chilled for a rich, creamy dessert.
