- 1 teaspoon salt
- 1½ cups granulated sugar
- ¾ cup butter, softened
- 4 egg whites
- 1 whole egg
- 1 cup heavy whipping cream
- 1½ teaspoons vanilla extract
- 2 teaspoons coconut extract
- 1 (15 oz) can full-fat coconut milk (for soaking)
Whipped Topping:
- 1 (8 oz) package cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract

- 2 cups heavy whipping cream, chilled
- 1 cup sweetened shredded coconut
🧁 Instructions
Prepare the pan and oven
Preheat your oven to 350°F (175°C) and grease a 9×13-inch cake pan.
Mix the batter
In a large bowl, combine the flour, baking powder, salt, and sugar. Add the softened butter and mix until crumbly. Blend in the egg whites, then the whole egg. Stir in the heavy cream, vanilla extract, and coconut extract until smooth and slightly fluffy.
Bake the cake
Pour the batter into the pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Soak the cake
While still warm, poke small holes across the surface. Shake the coconut milk well and pour it evenly over the cake. Let it cool completely so the liquid absorbs fully.
Make the topping
Beat the cream cheese until smooth. Add the sugar, vanilla, and coconut extract, mixing well. Gradually pour in the chilled cream and beat until thick and fluffy with soft peaks.
Assemble
Spread the whipped topping evenly over the cooled cake, then sprinkle shredded coconut on top.
Chill and serve
Refrigerate until ready to serve. Slice and enjoy a light, coconut-filled dessert.
Soft, creamy, and refreshing, this cake is a perfect balance of richness and light texture—ideal for any occasion.
