Pineapple Breeze Cake

The first time I tasted this cake was during a vacation in Hawaii, and I never forgot it. The combination of juicy pineapple and a rich coconut-pecan topping was unforgettable. As soon as I returned home, I set out to recreate it, and now every slice brings back memories of warm sunshine, ocean breezes, and relaxing island days.
Since then, this cake has become one of my favorite desserts to bake. The aroma of pineapple and vanilla filling the kitchen is enough to draw everyone in, and it’s always one of the first treats to disappear at family dinners, celebrations, and potlucks.

👩‍🍳 Instructions
Prepare the Batter
In a large mixing bowl, combine the flour, sugar, baking soda, eggs, crushed pineapple with its juice, canola oil, salt, and vanilla extract. Beat for about 3 minutes until the batter is smooth and well blended.
Bake
Pour the batter into an ungreased 9×13-inch baking pan. Bake in a 350°F (175°C) oven for approximately 35 minutes, or until a toothpick inserted in the center comes out clean.
Make the Topping
While the cake is baking, combine the evaporated milk, sugar, butter, and vanilla in a saucepan over medium heat. Bring the mixture to a gentle boil, then stir in the chopped pecans and shredded coconut. Continue cooking for about 2 minutes, stirring frequently.
Finish the Cake
As soon as the cake comes out of the oven, pour the warm coconut-pecan topping evenly over the surface, allowing it to soak into the cake. Let it cool for several minutes before serving.
Serve
Enjoy the cake warm on its own or pair it with a scoop of vanilla ice cream or a generous spoonful of whipped cream for an extra-special dessert.
✨ Moist pineapple cake topped with a buttery coconut-pecan glaze makes this tropical-inspired dessert irresistibly rich and comforting. It’s an easy crowd-pleaser that’s perfect for holidays, potlucks, or any occasion that calls for something sweet.
