👩‍🍳 Instructions
Step 1: Prepare the Hard-Boiled Eggs
Place the eggs in a saucepan and cover them with cold water, making sure there is about 1 inch of water above the eggs.
Bring the water to a boil over medium-high heat. Once boiling, cover the pan, remove it from the heat, and allow the eggs to sit for 12 minutes.
Step 2: Cool and Peel the Eggs
Prepare a bowl of ice water. Transfer the cooked eggs into the ice bath and let them cool for about 5 minutes.
Peel the eggs by gently cracking the shells and removing them under running water if needed.
Step 3: Cook the Potatoes
Place the diced potatoes in a large pot and cover them with cold water. Add a small amount of salt and bring the water to a boil.
Reduce the heat and simmer for 15–20 minutes, or until the potatoes are tender and can easily be pierced with a fork.
Step 4: Mash the Potatoes
Drain the potatoes well and return them to the warm pot. Add the softened butter and some of the milk or cream.
Mash until smooth, adding more liquid gradually until the potatoes reach your desired creamy texture.
Step 5: Add Seasonings
Mix in the salt and black pepper. If using fresh herbs, stir them in to add extra flavor throughout the dish.
Step 6: Fold in the Eggs
Slice the peeled hard-boiled eggs into quarters or thick pieces.
Gently fold the egg pieces into the mashed potatoes using a spoon or spatula.
Tip: Stir carefully so the egg pieces remain intact and the dish keeps its rustic texture.
Step 7: Finish and Serve
Transfer the mashed potatoes to a serving bowl. Garnish with fresh herbs or a light sprinkle of paprika if desired.
Serve warm and enjoy.
