Method

1. Prepare the Sauce

In a serving bowl, combine the sesame paste, soy sauce, Chinese black vinegar, chili oil, sugar, and Sichuan peppercorn powder. Slowly whisk in the warm noodle cooking water until the sauce becomes smooth and easily pourable.

2. Cook the Pork

Heat the vegetable oil in a skillet over medium heat. Add the minced garlic and ground pork, cooking until the pork is browned. Stir in the soy sauce, Shaoxing wine, sugar, and chili bean paste, then cook for another 3–5 minutes until the mixture is fragrant and lightly caramelized. Remove from the heat.

3. Boil the Noodles

Cook the noodles according to the package directions or type:

  • Fresh noodles: 2–3 minutes
  • Dried noodles: 5–8 minutes

Before draining, reserve about ½ cup of the cooking water. If desired, toss the drained noodles with a small drizzle of oil to prevent sticking.

4. Assemble the Bowls

For each serving:

  • Spoon the prepared sauce into the bottom of the bowl.
  • Add the hot cooked noodles.
  • Top with the seasoned pork mixture.

The warmth of the noodles will help loosen the sauce, allowing it to coat every strand evenly.

5. Garnish and Enjoy

Finish with chopped scallions, crushed roasted peanuts, and pickled mustard greens, if using. Toss everything together thoroughly before serving so the noodles are fully coated with the rich, spicy sauce.
