Slow Cooker 5-Ingredient Irish Coddle
This slow cooker Irish coddle is a traditional, hearty meal built from simple ingredients and slow, gentle cooking. Pork sausages and thick-cut bacon are combined with potatoes and onions, then simmered in broth. Rather than relying on strong seasonings, the flavors develop naturally as the meat releases its richness and the potatoes add body to the broth. The result is a comforting, rustic stew with tender vegetables and a light yet flavorful base.
Ingredients
- 1 1/2 lbs pork sausages (bangers or thick-style)
- 2 lbs potatoes (white or russet), cut into 1 1/2-inch chunks
- 6 oz thick-cut bacon, chopped
- 2 large yellow onions, sliced
- 2 cups chicken or vegetable broth
Instructions
Step 1: Brown the meats
In a skillet, cook the sausages until browned on all sides, about 8–10 minutes. In the same pan, cook the bacon until crisp.
Tip: Browning adds extra depth and richness that enhances the overall flavor of the dish.
Step 2: Cut the sausages
Slice the browned sausages into thick 1 1/2-inch pieces so they stay juicy and hold their shape.
Step 3: Layer everything
Add the potatoes to the bottom of a 4–6 quart slow cooker, followed by the sliced onions. Place the sausage pieces and bacon on top.
Tip: Keeping the potatoes on the bottom helps them cook evenly and become tender.
Step 4: Cook
Pour the broth over the ingredients—it doesn’t need to fully cover them. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
How to know it’s done: The potatoes should be soft when pierced with a fork, and the onions should be very tender and blended into the broth.
Step 5: Finish and serve
Gently stir before serving, just enough to combine the flavors without breaking up the potatoes.
