Rich and Creamy Baked Potatoes with Pour-Over Sauce

This dish is the definition of cozy comfort food: thin slices of potato layered in a baking dish and covered in a rich cream sauce with sweet caramelized onions, Parmesan, and thyme. As it bakes, it turns into a golden, bubbling casserole—somewhere between scalloped potatoes and a classic gratin—perfect for warming up a cold evening.

Pair it with roasted chicken, meatloaf, or baked pork chops. A fresh green salad or simple steamed vegetables helps balance the richness, while crusty bread and something bright like applesauce or citrus slices complete the meal.


Creamy Baked Potatoes 🥔✨

Ingredients

  • 2 tbsp unsalted butter (plus 1 tbsp for greasing)
  • 2 large yellow onions, thinly sliced
  • 1 tsp granulated sugar (optional)
  • 1 tbsp olive oil (optional)
  • 2 cups heavy cream
  • 1 cup Parmesan cheese, finely grated (plus 2 tbsp for topping)
  • 1½ tsp kosher salt, divided
  • 1 tsp black pepper
  • 2 tsp fresh thyme leaves (or 1 tsp dried)
  • 3 lbs russet or Yukon Gold potatoes, thinly sliced

Instructions

Preheat the oven
Set the oven to 375°F (190°C). Lightly grease a 9×13-inch glass baking dish with butter or cooking spray.

Caramelize the onions
In a skillet over medium heat, melt 2 tablespoons of butter. Add the sliced onions and ½ teaspoon of salt. Cook for 20–25 minutes, stirring occasionally, until soft, golden, and sweet. Add a bit of olive oil or a splash of water if needed. For quicker caramelization, sprinkle in the sugar if desired.

Prepare the cream mixture
In a bowl, whisk together the heavy cream, 1 cup of Parmesan, the remaining salt, black pepper, and thyme. Stir in the warm caramelized onions.

Slice the potatoes
Peel if preferred, then cut the potatoes into thin, even slices (about ⅛ inch thick). A mandoline can help keep them uniform.

Assemble the dish
Arrange the potato slices evenly in the prepared dish. Pour the cream and onion mixture over the top, gently moving the potatoes so the sauce spreads throughout.

Top and cover
Sprinkle the remaining 2 tablespoons of Parmesan over the surface. Cover the dish tightly with foil.

Bake until tender
Bake for 45–55 minutes, or until the potatoes are easily pierced with a fork.

Brown the top
Remove the foil and continue baking for another 15–20 minutes, until the top is golden and bubbling.

Rest and serve
Let the dish sit for about 10 minutes before serving to allow the sauce to thicken slightly. Serve warm.
