Creamy Garlic Chicken with Spinach
Ingredients
For a 9×13-inch glass or ceramic baking dish
Chicken
- 4 boneless, skinless chicken breasts (about 1½ lbs), patted dry
Vegetables
- 1 (10 oz) package frozen chopped spinach, thawed and well drained
Sauce Base
- 1 cup (240 ml) heavy cream
Cheese
- ¾ cup (75 g) freshly grated Parmesan
Flavor
- 3 garlic cloves, minced
Spice
- ¼ teaspoon ground nutmeg (optional but traditional)
Seasoning
- Salt and black pepper, to taste
Helpful Tips
- Make sure the spinach is thoroughly drained so it doesn’t add excess moisture to the sauce.
- Freshly grated Parmesan melts more smoothly and gives the sauce a better texture.
- Pat the chicken dry before baking to help it cook evenly.
Step-by-Step Instructions
1. Heat the Oven and Prepare the Dish
Set the oven to 375°F (190°C). Lightly coat a 9×13-inch baking dish with grease.
2. Mix the Creamy Sauce
Add the drained spinach, heavy cream, Parmesan, minced garlic, nutmeg, salt, and pepper to a bowl. Stir everything together until evenly incorporated.
3. Arrange the Chicken
Place the chicken breasts in the prepared baking dish. Pour the spinach and cream mixture over the chicken, spreading it evenly so each breast is covered with sauce.
4. Bake the Chicken
Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for another 10–15 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbling.
For a lightly browned finish, you can optionally broil the casserole for 2–3 minutes.
5. Rest and Serve
Let the casserole sit for 5 minutes after removing it from the oven. Serve with plenty of the creamy sauce spooned over each chicken breast for extra flavor.
