Cafeteria Fudge Squares

These classic Lunch Lady Brownies are a delicious throwback to old-school cafeteria desserts. They’re rich, fudgy, and wonderfully moist, finished with a silky cocoa frosting that softens and melts slightly over the warm brownies. It’s a simple treat that delivers plenty of nostalgic flavor.

Ingredients
For the Brownies
- 1/2 cup butter, melted
- 1 cup granulated sugar
- 2 eggs
- 3 teaspoons vanilla extract
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
For the Frosting
- 2 tablespoons butter, softened
- 3 tablespoons milk
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 cups powdered sugar
Instructions
Step 1: Prepare the Oven and Pan
Set your oven to 350°F (175°C). Line a 9×9-inch baking pan with foil, leaving enough foil hanging over the sides to make removing the finished brownies easier.
Step 2: Mix the Butter and Sugar
Add the granulated sugar and melted butter to a mixing bowl. Stir them together until the mixture becomes slightly lighter and looks well blended.
Step 3: Incorporate the Eggs and Vanilla
Add the eggs and vanilla extract to the butter and sugar mixture. Stir until everything is thoroughly combined.
Step 4: Add the Dry Ingredients
Slowly mix in the all-purpose flour and unsweetened cocoa powder. Stir only until the dry ingredients are incorporated, being careful not to overmix the batter.
Step 5: Bake
Transfer the brownie batter to the prepared baking pan and spread it evenly. Bake for 20–25 minutes, or until a knife inserted into the center comes out mostly clean with a few moist crumbs attached.
Step 6: Prepare the Frosting
As the brownies cool, make the frosting. In a medium bowl, combine the softened butter, milk, cocoa powder, and powdered sugar. Mix until the frosting is smooth. If necessary, adjust the consistency with a little more milk or powdered sugar.
Step 7: Frost While Warm
Spread the prepared frosting over the warm brownies. The warmth will allow the frosting to soften slightly and settle beautifully over the surface.
Step 8: Cut and Serve
Once ready, use the foil overhang to carefully lift the brownies from the pan. Slice them into squares and serve this nostalgic chocolate treat.
