Instructions

Step 1: Prepare the Oven

Preheat the oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan or line it with parchment paper for easy removal.

Step 2: Make the Cake Batter

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate large bowl, beat the softened butter with the granulated sugar and brown sugar until light and fluffy, about 2 to 3 minutes.

Add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients, alternating with the Greek yogurt or sour cream. Begin and finish with the dry ingredients, mixing just until combined.

Gently fold in the diced apples until evenly incorporated throughout the batter.

Step 3: Prepare the Crumb Topping

In a small bowl, combine the flour, granulated sugar, brown sugar, and cinnamon.

Add the cold butter and work it into the mixture using a fork, pastry cutter, or your fingertips until coarse crumbs form.

Step 4: Assemble and Bake

Spread the batter evenly into the prepared baking pan.

Sprinkle the crumb topping evenly across the surface, pressing it lightly into the batter.

Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.

Step 5: Prepare the Glaze (Optional)

In a small bowl, whisk together the powdered sugar, milk or cream, and vanilla extract until smooth.

If necessary, adjust the consistency with a little more milk.

Step 6: Cool and Serve

Allow the cake to cool in the pan for 10 to 15 minutes before serving.

Drizzle with the glaze or lightly dust with powdered sugar if desired.

Serve warm on its own or with a scoop of vanilla ice cream or a spoonful of whipped cream for an extra-special treat.
