Found on a stained index card tucked in my grandma’s 1985 church cookbook. Four simple items bake up perfectly, and the plates are always licked clean by my family.

This Oven-Baked 4-Ingredient Beef Harrington is a simple, hearty casserole made with ground beef, hash browns, creamy mushroom soup, and plenty of cheddar cheese.
Everything comes together in one baking dish and cooks until hot, bubbly, and golden around the edges. It’s an easy weeknight dinner that uses basic ingredients and delivers plenty of comforting flavor.
Oven-Baked 4-Ingredient Beef Harrington
Ingredients
- 1 pound ground beef
- 1 can condensed cream of mushroom soup, 10.5 ounces
- 2 cups frozen hash brown potatoes, thawed
- 2 cups shredded cheddar cheese, divided
Directions
1. Preheat the oven
Preheat your oven to 350°F (175°C).
Lightly grease a 9-by-13-inch baking dish.
2. Brown the beef
Add the ground beef to a large skillet over medium heat.
Cook until fully browned, breaking it into small pieces as it cooks.
Drain away any excess grease.
3. Combine the casserole mixture
In a large mixing bowl, combine the cooked ground beef, cream of mushroom soup, thawed hash browns, and 1 1/2 cups of shredded cheddar cheese.
Stir until everything is evenly mixed.
4. Assemble the casserole
Spread the beef and potato mixture evenly into the prepared baking dish.
Sprinkle the remaining 1/2 cup cheddar cheese over the top.
5. Bake
Bake uncovered for 30 to 35 minutes, or until the casserole is hot and bubbling and the cheese is melted and lightly golden around the edges.
6. Rest and serve
Remove the casserole from the oven and let it rest for about 5 minutes before serving.
Serve warm as an easy family dinner with a simple salad, steamed vegetables, or green beans on the side.
Creamy, cheesy, and filling, this four-ingredient casserole is an easy comfort-food meal for busy evenings.
