Poor Man Husband Casserole
Ingredients
- 12 ounces egg noodles or short pasta
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can tomato sauce, 15 ounces
- 1 can diced tomatoes, 14.5 ounces, drained
- 1 teaspoon Italian seasoning
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 2 cups shredded cheddar or mozzarella cheese
- 2 tablespoons butter
Directions
1. Cook the noodles
Bring a large pot of salted water to a boil.
Cook the noodles until just al dente.
Drain well, then toss with the butter to prevent sticking.
Set aside.
2. Prepare the meat sauce
In a large skillet over medium heat, cook the ground beef until browned.
Add the diced onion and minced garlic.
Continue cooking until the onion is soft and fragrant.
Stir in the tomato sauce, drained diced tomatoes, Italian seasoning, salt, and black pepper.
Reduce the heat and simmer for about 10 minutes so the flavors can blend.
3. Make the creamy layer
In a medium bowl, combine the softened cream cheese and sour cream.
Mix until smooth and creamy.
4. Assemble the casserole
Preheat your oven to 350°F (175°C).
Lightly grease a 9-by-13-inch baking dish.
Spread half of the cooked noodles across the bottom.
Top with half of the cream cheese mixture, followed by half of the meat sauce.
Repeat with the remaining noodles, creamy mixture, and meat sauce.
5. Add the cheese and bake
Sprinkle the shredded cheese evenly over the top.
Cover the baking dish with aluminum foil and bake for 20 minutes.
Remove the foil and continue baking for another 10 to 15 minutes, or until the cheese is melted, bubbly, and lightly golden.
6. Rest and serve
Remove the casserole from the oven and let it rest for about 5 minutes before serving.
Serve warm with a simple salad, green beans, or garlic bread.
Creamy, cheesy, and hearty, this easy casserole is the kind of dependable comfort food that belongs in any family dinner rotation.
