Slow Cooker Garlic Herb Butter Beef Roast
Ingredients
- 3 to 3 1/2 pounds beef chuck roast
- 1/2 cup unsalted butter, melted
- 6 cloves garlic, finely minced
- 2 teaspoons Italian herb blend, or a combination of thyme and rosemary
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
Directions
1. Prepare the roast
Place the chuck roast in a 5- to 7-quart slow cooker, keeping the fat side facing upward.
Leave the larger layer of surface fat in place while cooking to help add flavor and moisture.
2. Prepare the garlic butter
Melt the butter in a small saucepan or microwave-safe bowl.
Add the minced garlic and warm gently until combined, making sure the mixture does not begin to sizzle.
3. Add the seasonings
Stir the Italian herbs, kosher salt, and black pepper into the melted garlic butter.
Mix until evenly combined.
4. Pour over the beef
Slowly drizzle the garlic herb butter over the chuck roast.
Coat the top well and allow some of the butter mixture to run down the sides of the meat.
