Directions
Heat the oven: Preheat the oven to 425°F (220°C). Line a large rimmed sheet pan with foil and lightly coat it with nonstick spray.
Prepare the marinade: Add the balsamic vinegar, olive oil, soy sauce, Worcestershire sauce, honey, Dijon mustard, garlic, and black pepper to a bowl. Whisk until well combined.
Marinate the steak: Place the sliced sirloin in a shallow dish or zip-top bag. Pour half of the marinade over the steak and toss until evenly coated. Let it marinate for at least 15 minutes.
Prepare the vegetables: Arrange the broccoli, red pepper, yellow pepper, and onion on the prepared sheet pan. Add the remaining marinade and 2 tablespoons of olive oil. Season with salt and pepper, toss well, and spread everything into an even layer.
Roast the vegetables: Bake for 12–15 minutes, until the vegetables begin to soften and develop caramelized edges.
Add the steak: Remove the steak from the marinade and pat the strips dry. Move the vegetables toward the sides of the pan and place the steak in the center.
Finish cooking: Return the pan to the oven and roast for another 8–10 minutes, or until the steak reaches 145°F (63°C) and the vegetables are tender.
Rest and serve: Remove from the oven and let everything rest for about 5 minutes. Garnish with fresh parsley and serve on its own or alongside rice or mashed potatoes.
