Slow Cooker Corned Beef Hash & Cabbage

Slow Cooker Corned Beef Hash & Cabbage
A simple, satisfying slow-cooker meal made with just a few everyday ingredients. Canned corned beef hash, tender cabbage, sweet onion, and savory beef broth come together for a warm, comforting supper with very little preparation.
Ingredients
| Ingredient | Amount |
|---|---|
| Canned corned beef hash | 2 cans (14–15 oz each) |
| Green cabbage, cut into wedges or chunks | 1 small head |
| Yellow onion, sliced | 1 medium |
| Low-sodium beef broth | 1 cup |
Directions
- Prepare the slow cooker: Lightly grease the inside of the slow cooker with cooking spray or a small amount of oil.
- Add the onion: Spread the sliced onion evenly across the bottom of the cooker.
- Layer the hash: Spoon the corned beef hash over the onions and gently spread it into an even layer.
- Add the cabbage: Arrange the cabbage pieces over the corned beef hash. Pour the beef broth around the edges of the slow cooker.
- Cook: Cover and cook on LOW for 4–5 hours, or until the cabbage is tender and the corned beef hash is thoroughly heated.
- Finish and serve: Gently stir the ingredients together before serving, or keep the layers intact for a rustic presentation. Spoon into bowls, making sure each serving contains cabbage, onion, corned beef hash, and some of the flavorful broth.
Serve with warm buttered rye or sourdough bread. Carrots, roasted potatoes, mustard, or dill pickles also make excellent additions.
