Slow Cooker Potatoes and Gravy

Ingredients

  • 2 pounds russet or Yukon Gold potatoes, peeled and cut into 1–1½-inch chunks
  • 2 packets (0.8–1 oz each) dry brown gravy mix
  • 3 cups water

Instructions

  1. Peel the potatoes and cut them into evenly sized chunks.
  2. Lightly grease the inside of a slow cooker.
  3. Arrange the potatoes in an even layer in the bottom of the slow cooker.
  4. In a bowl, whisk the dry gravy mix with the water until completely smooth.
  5. Pour the gravy mixture over the potatoes.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are tender when pierced with a fork.
  7. Gently stir the potatoes to coat them evenly with the gravy.
  8. If the gravy is too thin, leave the slow cooker uncovered and cook on HIGH for another 15–20 minutes.
  9. Taste and adjust the seasoning if necessary.
  10. Serve hot, spooning plenty of gravy over the potatoes.
