How To Make Laura Bush’s Cowboy Cookies
Step 1: Heat the Oven and Mix the Dry Ingredients
Set the oven to 350°F (175°C). In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt. Stir until evenly blended, then set aside.
Step 2: Beat the Butter and Sugars
In a separate, very large bowl, beat the room-temperature butter with an electric mixer until smooth and creamy. Slowly add the granulated sugar and packed light-brown sugar, continuing to mix until well incorporated.
Step 3: Incorporate the Eggs and Vanilla
Add the eggs individually, mixing well after each one. Pour in the vanilla extract and blend until combined.
Step 4: Add the Dry Mixture
Gradually incorporate the prepared flour mixture into the wet ingredients. Mix on low speed only until everything comes together. Avoid overmixing the dough.
