Slow Cooker Fruit Cocktail Cake with Just 5 Ingredients

Fruit cocktail cake is one of those quietly resourceful mid-century desserts that has stood the test of time—especially in the Midwest. Ingredients

  • 1 box (15.25 oz) yellow cake mix
  • 2 cans (15 oz each) fruit cocktail in juice, undrained
  • 2 large eggs
  • ⅓ cup neutral oil (such as canola or vegetable)
  • ½ cup sweetened shredded coconut (optional)

Directions

1. Prepare the slow cooker
Lightly grease the inside of a 4–6 quart slow cooker.

2. Mix the batter
In a large bowl, combine the cake mix, fruit cocktail with its juice, eggs, and oil. Stir until smooth and fully blended; the batter will be somewhat thin.

3. Add coconut (optional)
Fold in the shredded coconut if using.

4. Cook
Pour the batter into the prepared slow cooker and spread it evenly. Cover and cook:

  • On HIGH for 2–2½ hours
  • On LOW for 4–4½ hours
    Check for doneness—the center should be set and a toothpick inserted should come out mostly clean.

5. Let it rest
Turn off the slow cooker and allow the cake to sit, covered, for about 15 minutes so it can firm up slightly.

6. Serve
Spoon the warm cake into bowls and top with ice cream, whipped cream, or your favorite garnish.
