Kentucky Derby Casserole

Kentucky Derby Casserole
Kentucky Derby Casserole is a satisfying breakfast bake packed with familiar brunch favorites in a single pan. Chunks of day-old bread are layered with savory breakfast sausage, crisp green bell pepper, and sharp cheddar cheese before being covered in a creamy egg-and-milk mixture. During baking, the bread soaks up the custard, creating a light, tender texture, while the cheese melts into a bubbly, golden topping. Ideal for holiday mornings, weekend breakfasts, or meal prep, this casserole is both convenient and full of comforting flavor.
Ingredients
| Ingredient | Quantity |
|---|---|
| Breakfast sausage | 1 lb |
| Day-old bread, cut into 1-inch cubes | 6 cups |
| Sharp cheddar cheese, shredded | 2 cups |
| Green bell pepper, diced | 1/2 cup |
| Yellow onion, diced | 1/4 cup |
| Large eggs | 6 |
| Whole milk | 2 cups |
| Salt | 1 tsp |
| Black pepper | 1/2 tsp |
| Dry mustard | 1 tsp |
| Unsalted butter, melted | 2 tbsp |
| Fresh chives, hot sauce, or additional black pepper (optional) | To taste |
Directions
Step 1: Heat the Oven
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick cooking spray, making sure the entire dish is lightly coated.
Step 2: Layer the Ingredients
Arrange the bread cubes evenly in the baking dish. Scatter the cooked, drained sausage over the bread, followed by the diced bell pepper, onion, and shredded cheddar cheese, spreading each ingredient evenly.
Step 3: Prepare the Egg Mixture
In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and dry mustard until the mixture is smooth and well blended.
Step 4: Pour and Soak
Evenly pour the custard over the layered ingredients. Gently press the bread into the liquid with a spoon or spatula so it can absorb the mixture.
Step 5: Let It Rest
Leave the casserole at room temperature for about 10 minutes to give the bread time to soak up the custard. Drizzle the melted butter evenly across the top.
Step 6: Bake
Bake on the middle oven rack for 35 to 40 minutes, or until the center is fully set, the edges are lightly browned, and the top develops a golden finish.
Step 7: Cool Slightly and Serve
Remove the casserole from the oven and let it rest for 5 minutes before slicing. This resting time helps the casserole hold its shape. Serve warm with optional garnishes such as fresh chives, hot sauce, or extra black pepper.
