Ingredients
- 1 medium head cauliflower, about 2 pounds, cut into bite-size florets
- 2 cups shredded sharp cheddar cheese, divided
- 2 large eggs, whisked
- 1 teaspoon kosher salt
Directions
1. Preheat the oven
Preheat your oven to 425°F (220°C).
Line a large baking sheet with foil or parchment paper and lightly grease it.
2. Prepare the cauliflower
Cut the cauliflower into small florets, roughly 1 inch in size.
Pat them dry with paper towels or a clean kitchen towel to remove as much excess moisture as possible.
3. Coat with egg and cheese
In a large bowl, whisk the eggs with the salt.
Add the cauliflower and toss until the florets are evenly coated.
Sprinkle in 1 1/2 cups of shredded cheddar cheese and toss again.
4. Arrange on the baking sheet
