Crunchy corn tortilla scoops filled with savory seasoned beef, hearty chili beans, and plenty of melted cheddar make this an easy crowd-pleasing appetizer. They’re simple to assemble, bake in minutes, and are perfect for parties, game nights, or casual gatherings.
Ingredients
- 1 lb ground beef, 80–90% lean
- 1 (15-oz) can chili beans in mild chili sauce, undrained
- 2 cups shredded sharp cheddar cheese
- 1 (9–10-oz) bag sturdy corn tortilla scoop chips, about 40–50 pieces
- Salt, optional
- Black pepper, optional
Instructions
- Prepare the oven: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook the beef: Brown the ground beef in a skillet over medium heat for 6–8 minutes, breaking it apart as it cooks. Drain any excess grease.
- Make the filling: Stir the chili beans and their sauce into the cooked beef. Let the mixture simmer for 3–5 minutes, stirring occasionally, until thickened. Season with salt and pepper if desired.
- Set up the chips: Arrange the tortilla scoop chips upright in the prepared baking dish, keeping them close together so they remain stable.
- Fill and add cheese: Spoon a small amount of the beef-and-bean mixture into each tortilla scoop. Sprinkle shredded cheddar generously over the tops.
- Bake: Place the dish in the oven and bake for 8–12 minutes, or until the cheese is fully melted and the tortilla edges are crisp.
