Classic French Brioche Bread Recipe

Some recipes do more than fill the kitchen with delicious aromas—they create a sense of comfort and bring back memories of quiet mornings and homemade meals. Brioche has always been that kind of bread for me. I remember the excitement of making my first loaf, watching the buttery dough transform in the oven and seeing the golden crust develop as the bread baked. When it finally cooled, the entire kitchen smelled warm, rich, and inviting.

There is something special about a freshly baked brioche. It can make an ordinary breakfast feel special, turn an afternoon coffee break into a relaxing treat, or add an elegant touch to a holiday table. This recipe is versatile enough for all of those occasions, whether you’re preparing breakfast for your family, baking for guests, or simply craving a soft and indulgent homemade bread.

What makes brioche especially appealing is its combination of simplicity and richness. The ingredients are familiar and easy to find, yet they create a loaf that is incredibly tender, buttery, and satisfying. It works beautifully for breakfast, afternoon snacks, French toast, or even dessert.

If you’ve never worked with yeast before, there’s no need to be intimidated. Brioche does require some patience, but the process is straightforward. Instructions

1. Prepare the Yeast

Pour the warm milk into a small bowl and sprinkle in the yeast. Allow the mixture to stand for 5–10 minutes. It should become slightly foamy, indicating that the yeast is active.

2. Mix the Dough

In a large mixing bowl, combine the flour, sugar, and salt. Add the eggs and the milk-and-yeast mixture. Stir until the ingredients come together and form a sticky dough.

3. Knead in the Butter

Knead the dough for about 5 minutes by hand or using a mixer. Begin adding the softened butter gradually, working it into the dough a little at a time.

Continue kneading for another 8–10 minutes. The finished dough should become smooth, stretchy, soft, and slightly shiny.

4. Let the Dough Rise

Transfer the dough to a lightly greased bowl and cover it. Leave it in a warm, draft-free place for approximately 1½–2 hours, or until it has doubled in volume.

5. Shape the Brioche

Once the dough has risen, gently press it down to remove excess air. Shape it into a loaf or braid, depending on your preferred style, and place it inside a greased loaf pan.

6. Allow a Second Rise

Cover the shaped dough and let it rise for another 45–60 minutes. It should look noticeably puffed and rise slightly above the rim of the pan.

7. Bake

Preheat the oven to 350°F (175°C).

Place the risen dough in the oven and bake for 30–35 minutes, or until the surface is a deep golden brown and the loaf sounds hollow when gently tapped.

8. Cool Before Slicing

Take the brioche out of the pan and transfer it to a wire rack. Let it cool before cutting into it so the interior has time to finish setting.

Slice and enjoy the brioche plain, with butter or jam, alongside coffee or tea, or use it to make a rich French toast.
