Dirty Martini Potato Salad

Ingredients
🥔 Potato Mixture
• 3 lbs potatoes, peeled and cut into chunks
• 1 cup green olives, sliced
• ½ cup crumbled blue cheese
🥄 Dressing
• 1 cup mayonnaise
• 2 tbsp olive oil
• ¼ cup olive brine
• 1 tbsp vodka
• 2 tbsp chopped fresh chives
• 1 tsp celery seed
• Kosher salt and black pepper, to taste
Instructions
1️⃣ Boil the Potatoes
Place the potatoes in a large pot and cover with cold salted water. Bring to a boil and cook for 10–15 minutes, or until fork-tender. Drain thoroughly.
2️⃣ Prepare the Dressing
In a large mixing bowl, whisk together the mayonnaise, olive oil, olive brine, vodka, chives, and celery seed. Season with salt and pepper to taste.
3️⃣ Combine Everything
Add the warm potatoes, sliced olives, and blue cheese to the dressing. Gently fold everything together until evenly coated.
4️⃣ Chill Before Serving
