Instructions
1. Prepare the filling
Finely chop the vegetables and dice your chosen protein into small, even-sized pieces to make rolling easier.
2. Cook the mixture
Heat a small amount of oil in a large skillet over medium-high heat. Add the garlic and ginger, then cook the protein until fully done. Stir in the vegetables, soy sauce, salt, and pepper, cooking for a few minutes until the vegetables are slightly tender while still retaining a bit of crunch.
3. Let the filling cool
Transfer the cooked mixture to a bowl or plate and allow it to cool completely. A cool, relatively dry filling helps prevent the wrappers from becoming soft or tearing.
4. Fill the wrappers
Lay an egg roll wrapper on a flat surface with one corner pointing toward you. Spoon a portion of the cooled filling into the center.
5. Roll and seal
Fold the bottom corner over the filling, fold in both side corners, and roll tightly toward the top. Lightly moisten the final corner with water and press firmly to seal. Continue until all of the filling has been used.
6. Fry until golden
Heat oil to 350°F (175°C) in a deep skillet or fryer. Fry the egg rolls in batches for 3–5 minutes, turning occasionally, until they are evenly golden brown and crispy.
7. Drain and enjoy
Remove the egg rolls with a slotted spoon and place them on paper towels to drain excess oil. Serve warm with sweet and sour sauce, duck sauce, or your favorite dipping sauce.
