Instructions
Sauté the Onion
Set the Instant Pot to Sauté mode. Add the olive oil and diced onion, cooking until softened and translucent.
Brown the Beef
Add the ground beef and cook, breaking it apart with a spoon until it is mostly browned.
Season the Mixture
Stir in the salt, black pepper, garlic powder, and dried thyme. Drain any excess grease if necessary.
Add the Broth and Rice
Pour the chicken broth into the pot. Sprinkle the rinsed rice evenly over the beef mixture without stirring, making sure the rice is covered by the liquid.
Top with the Soup
Spoon the cream of mushroom soup over the rice and gently spread it into an even layer. Leave the layers undisturbed.
Pressure Cook
Turn off Sauté mode, secure the lid, and set the valve to Sealing. Cook on High Pressure for 8 minutes.
Release the Pressure
When the cooking cycle is complete, carefully perform a quick release by turning the valve to Venting. Wait until the pressure has fully released before opening the lid.
Finish the Casserole
Stir in the corn, then gradually mix in the shredded cheese, adding one cup at a time until melted and creamy. Let the casserole rest uncovered for a few minutes before serving hot.
