This hearty and convenient casserole is made in a slow cooker, allowing for easy preparation and a flavorful, comforting meal.

Ingredients:

Instructions:

  1. Add the sliced white onion, thinly sliced red potatoes, thinly sliced carrots, and sliced celery to the crockpot.
  2. Drizzle the vegetables with olive oil and add the minced garlic. Toss everything together until the vegetables are well coated.
  3. In a skillet over medium-high heat, brown the lean ground beef. Season the beef with salt, pepper, onion powder, and garlic powder while it cooks.
  4. Stir the Worcestershire sauce into the browned ground beef.
  5. Spread the seasoned ground beef evenly over the vegetables in the slow cooker.
  6. Top the ground beef with slices of butter.
  7. Sprinkle the uncooked white rice evenly over the layer of ground beef.
  8. In a separate bowl, mix together the condensed tomato soup and 1 1/2 cups of water. Pour this mixture evenly over the rice in the crockpot.
  9. Cover the crockpot and cook on low heat for 6-7 hours or on high heat for 4 hours.
  10. Once the cooking time is complete, uncover the crockpot and sprinkle the grated cheddar cheese over the top of the casserole.
  11. Cover the crockpot again, turn it off, and let it sit until the cheese is completely melted.
